When do you stop processing?

I had a go at ngc6960 over the last couple of nights 34 x 10min subs along with dark flat and bias frames. It just about fits on the sensor Atik 428ex OSC, through an ed80. The problem I have is knowing when to stop processing. I know I haven't controlled the star very well but that's down to my lack of processing skills with PS(CS2). Any pointers gratefully received Thanks for looking Stuart
